That's the way the cookie pie crumbles

Regardless of who you were rooting for yesterday, Superbowl is an event with food, maybe some unexpected and of course some tried and true eats. And of course, there should always be room for desserts, at least a cookie or two. This one is a great alternative to regular cookies, festive, a big thick slice of a cookie my cookie pie.  
1 1/2 c. coconut sugar
1 1/4 c. melted coconut oil
2 large eggs + 1 large egg yolk
1 1/2 tsp vanilla extract
1 1/2 c. whole wheat flour - could also use gluten-free, if you do add 1 tsp xanthan gum 
1 c. oat flour - I took 1 c. rolled oats and processed it into flour in food processor
1 tsp baking soda
3/4 tsp baking powder
1 tsp sea salt
1 3/4 c. dark chocolate chips - I rough chopped enough from a 1lb dark chocolate bar from Trader Joes. The bigger the chunks the better!

Preheat oven to 350 degrees. Spray 10 inch pie dish with coconut oil. 
Place sugar and oil in large mixing bowl and whisk until combined. Whisk in eggs and vanilla.
In a medium bowl whisk together the flours, baking powder, baking soda, salt. Add the wet mixture slowly into the dry mixture until everything is just combined. Stir in chocolate.
Pour mixture into prepared pie dish. Bake 30-40 min. Edges should be dry and center should be a little soft. You want the cookie to be a bit under cooked. Allow to cool 15-20 min before slicing.
