I don't know about you, but lately I have had to remember to keep things simple. For me, that is easier said than done! I have just had so much going on - spring break fun, new customers and a million and one house projects (some finally finished this week) that going back to some basic and simple things that help me feel balanced. So I have been focusing on some of the best foods and flavors that are simple, but so good. This night was when the hubby was out, son just ate his full of birthday party pizza. I roasted enough asparagus, favorite spring veggie, for multiple meals (and a future chopped salad).
Here's what I did - Pre-heat oven to 375 degrees. 1 bunch of asparagus, snapped off the ends, put on a lined cookie sheet, drizzle a few tbsp olive oil, sprinkle with sea salt, black pepper, and zest of one lemon, saving the lemon to juice on top after roasting. Roast for 15-17 min. As the veggies are roasting make a quick sunny side up egg. Plate up the veggies, squeeze lemon juice on top and place the egg on top.
