Yes, I have been away for a minute. April has been a crazy busy month. Family visits, holidays, a few birthdays, baseball season and I am still getting used to my full-time work schedule. It's been a whirlwind!
Keeping dinners planned and fairly simple is always helpful. We love taco Tuesday - the flavors are always a hit and there are so many different ways to cook them up. Tonight I did a quick sheet pan dinner with all the favs of good ol' fajitas.
Ingredients:
4 chicken thighs + package of chicken breast tenders
3 tbsp olive oil
1 tsp cumin
1 tsp sea salt
1/2 tsp red pepper flakes
1 lime zested and juiced
1/2 c. cilantro chopped
1 large bell pepper, thinly sliced - I got a few of the red and yellow striped ones at Whole Foods
1/2 purple onion, thinly sliced
Toss all together in a bowl, make sure all mixed well
Spread out on a sheet pan
Toss a few cut up tortillas around the pan - they will turn into lil baked chips
375 degrees for 20 min
Serve with avocado and greens
