My inner goddess salad

I love a good salad and I have definitely made my share of them in my life. I love a salad that reuses some leftovers plus a few new adds and a spin on a bright and flavorful "herb+greens" goddess dressing. For this one I put leftover grilled chicken and cannellini beans to use along with a variety of fresh veggies I had on hand. It's easy to pull together for dinner or lunch.  
Ingredients:
1 garlic clove, peeled
1 c. Italian parsley 
1/4 c. spinach 
1/4 c. roughly chopped chives
2 tsp capers but have used anchovies also
3 tsp champagne vinegar
1/4 c. mayonnaise (I make homemade)
1/2 tsp sea salt
2 tbsp olive oil
2 chopped cooked chicken breasts
2 c. cannellini beans could also use chickpeas
6 c. mixed greens - spinach, arugula, romaine- whatever you like/have on hand
2 c. veggies - I used cucumber, endive, tomatoes, micro greens, and a few radishes.
To make the dressing - bring a small bowl of salted water to a boil. Prep a medium bowl of ice water and a slotted spoon. Drop the garlic clove into the boiling water and cook for 1 min. Place the parsley, spinach, and chives into the water and stir until they wilt about 30 seconds. Immediately use the spoon and remove the garlic and wilted greens and place in ice water. When they are cold pull the garlic and greens out of the water, squeeze them to remove excess water. Chop roughly. 
In a mini food processor, combine the garlic, greens, capers, vinegar, mayonnaise, olive oil and salt. Blend until a smooth puree.
Arrange all your salad greens, veggies, chicken, beans. Drizzle the dressing on top and toss all together and serve on the side depending on your crowd.
My boys devoured this the first time I served it without hesitation and tonight and son let me know to definitely make this again while the hubby was having seconds.
